Not so in my borstal. Despite rules to the contrary, we squirreled away all tuck in our locker in the dormitory and it was then slowly gobbled up, sometimes in the dead of night, when other boys were not about to threaten one's food hoard. Salivary juices still run riot in my mouth when I think of those large wedges of chocolate cake, which I stuffed clandestinely into my mouth. Even then, I dabbled in the kitchen and so I can remember that, in the case of this chocolate cake, ground rice and ground almonds partly or wholly took the place of the more usual flour. The cake also had two icings, a butter icing in the middle and a glacé icing on top. Many years later, I recall asking my Mother for the recipe for this school chocolate cake, which had brought me so much joy. In her characteristically vague way, she promised to search for it but she never did and she took the culinary secret of how it was made to her grave.Over the years, my consequent inability to re-create this confection periodically came to mind and with it came a sense of sadness, a sadness I shared one day with my older sister. It is pure serendipity that this cookbook dwells on the author's memories of food eaten during childhood summers on the west coast of Mayo, for I too spent the happy summer holidays of my youth in this part of the country.Be that as it may, with many thanks to Tasmin Day-Lewis, I now share this recipe with you. My sister was right. 175g good dark chocolate, chopped175g butter175g caster sugar4 eggs separated85g ground almond85g flourwhole walnuts to decorateRICH CHOCOLATE ICING:125 g good dark chocolate, chopped40g butter85 ml creamPut all the ingredients into a bowl over a saucepan of hot water and stir gently over the heat. Cream the butter with the sugar (this is easily done in a food processor), add the egg yolks one by one, then the almonds, flour and the melted chocolate.Whisk the egg whites until they form soft peaks and gently fold them into the mixture, little by little.Divide the mixture between the two sandwich tins and cook in the oven for about 20 minutes. Bake at 325 degrees for 40 minutes or until a wooden toothpick inserted in the center of the cakes comes out clean. To me, soul food evokes memories of the kind of food my mother and my grandmother used to cook when I was a child. This celebration on May 5th every year is commonly thought to be Mexico's Independence Day holiday. As it happens, the holiday was declared not to celebrate Mexican independence from Spain, but the victory of the Mexican army over the French in 1862 at Puebla.&lt;br /&gt;&lt;br /&gt;It is in the state of Puebla that this holiday is celebrated with special Cinco de Mayo recipes. In the rest of the country, it is regarded as a minor holiday, despite how popular this commemoration is in the United States. Puebla's Cinco de Mayo dishes often include mole, a traditional Mexican recipe which hails from this state.&lt;br /&gt;&lt;br /&gt;One traditional Cinco de Mayo recipe often made in Puebla for this holiday is turkey cooked in a mole sauce. This would be mole poblano in particular (the name means "Puebla-style mole"), a rich, nutty and spicy sauce which is worth every bit of the considerable time and effort needed to make it. Turkey is a popular food in Puebla and in fact, in much of the country. Turkey shows up not only here, but also in many Mexican recipes, even some of Mexico's other special holiday dishes.&lt;br /&gt;&lt;br /&gt;Christmas And Epiphany Food Traditions&lt;br /&gt;&lt;br /&gt;Since Mexico is an overwhelmingly a Catholic nation, there are special Christmas celebrations as well as celebrations for feast days of certain saints as well as other dates of religious significance throughout the year. The addition of hot chocolate, a drink which is a new world innovation is a Mexican addition to this holiday meal.&lt;br /&gt;&lt;br /&gt;Of course, no discussion of Mexican food traditions and Mexican food history would be complete without a mention of Dia de los Muertos, the Mexican "day of the dead." This is the Mexican celebration of All Saints Day on November first and there are special dishes eaten such as candied pumpkin, pan de muerto - bread which is baked, glazed, and decorated with colored sugar. Smaller pieces of dough are prepared in the shape of bones and skulls to decorate these holiday loaves.&lt;br /&gt;&lt;br /&gt;The most famous food tradition connected with Dia de los Muertos is the making of the colorful, skull shaped candies called sugar skulls. These are made from sugar which is pressed into molds and decorated, sometimes very elaborately - many of these candies are works of art which are simply to wonderful to eat!&lt;br /&gt;&lt;br /&gt;Mexican food traditions, like those of other countries are a reflection of their culture. Here are two good ones to try: a simpler hot one that's all about cheese, and a more complex cold one that's an excellent combination of all sorts of flavors - and is for big appetites! &lt;br /&gt;&lt;br /&gt;Hot 'n Spicy Three-Cheese Panini&lt;br /&gt;&lt;br /&gt;•1 medium-size ciabatta loaf&lt;br /&gt;•2 slices Provolone cheese&lt;br /&gt;•¼ cup grated Parmigiano Reggiano cheese&lt;br /&gt;•¼ cup grated or shredded Cheddar cheese&lt;br /&gt;•1 medium jalapeno pepper, fresh or pickled, roughly chopped&lt;br /&gt;•Olive oil&lt;br /&gt;&lt;br /&gt;Preheat panini press to medium. Slice ciabatta loaf horizontally; lay flat on plate. Lay Provolone slices on panini bottom; top with Parmigiano Reggiano and Cheddar cheese. Place jalapeno bits on top of cheese, and cover with panini top. Brush with olive oil and grill in press for 5-7 minutes until cheeses are melted. Serve immediately and enjoy.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Overstuffed Meaty Panini&lt;br /&gt;&lt;br /&gt;•2 slices whole-wheat bread&lt;br /&gt;•2 thin slices roast beef&lt;br /&gt;•2 slices honey ham&lt;br /&gt;•3 round slices hard salami&lt;br /&gt;•2 slices smoked turkey&lt;br /&gt;•1 thick slice Emmental, Provolone or Cheddar cheese&lt;br /&gt;•3 slices tomato&lt;br /&gt;•Fresh organic lettuce&lt;br /&gt;•Mayonnaise&lt;br /&gt;•Dijon mustard&lt;br /&gt;&lt;br /&gt;Lay bread slices on a plate. Slather with mayonnaise (top half) and Dijon mustard (bottom half). Place cheese slice on bottom half. Layer all other ingredients to your liking atop cheese slice.
